If you are too scared to turn a vegetable into a beverage, start slow by pairing these cocktails with a charcuterie board or aperitivo.

Pistachio Mule

Afraid to leave the sweetness behind? Start out slow with a pistachio mule. Pistachio is a common ingredient in many desserts from ice cream, to cookies, to cake. However, instead of a sweet pistachio syrup try a classic vodka martini with pistachio infused vodka. Let the pistachios sit in the vodka for at least two days to create your own infusion. Add a small amount of simple syrup to cut the bitterness.

Blue Fig Martini

What would a savory cocktail list be without a grate of cheese? The Blue Fig martini originated from the cocktail bar Chambar in Vancouver. According to bar owner Karri Schuermans, people from all over the world travel to Vancouver for this cocktail. But you can also recreate this recipe in your own kitchen. The key: fig-infused gin. Allow the figs to sit in the gin for two days. Serve with a side of blue cheese for the perfect flavor combination.

Pickle Martini

This cocktail is not for those who give up their pickle when out to lunch; It’s for those with an empty pickle jar in the fridge. This classic savory cocktail can be made with an empty pickle jar. Just add classic martini ingredients and enhance the recipe with fresh dill. The cocktail can be shaken in the pickle jar. Don’t forget to garnish the cocktail with pickles and more fresh dill.

Smoky Mary

Bloody Marys all summer long. This cocktail is a twist on the Bloody Mary brunch drink. This cocktail is perfect for fans of tequila, and uses Mezcal which brings a smokey flavor. Although optional, chipotle sauce can be added for a bit of spice.

Channel a taste of Greece with this martini. Tzatziki is a yogurt based sauce used on top of vegetables, salads and a variety of Greek dishes. The yogurt and whole milk featured in this cocktail gives it a realistic tzatziki taste. See, it rhymes! Let’s save the most eclectic drink for last. A hot dog martini. This cocktail could be a swing and a hit out of the ballpark or a miss. Although this recipe includes some strange ingredients like sesame oil and potato vodka, the combination creates a savory masterpiece.
